Springtime Fresh Salad Rolls

One of the most magical times of the year is when the days start getting longer and the temperature slowly starts to rise. When you can walk outside without a million layers and there is finally hope that soon (maybe) you’ll be able to wear flip flops once more.

Spring is finally here.


And so in honour of that, as well a Bridgehead celebratory potluck, I give you these delightfully crunchy & fresh-tasting salad rolls. They were a potluck hit and quick to disappear!

Springtime Fresh Salad Rolls

RECIPE: Mmm… Springtime Fresh Salad Rolls

  • 12 sheets of rice paper
  • mango, cut into matchsticks
  • cucumber, seeded & cut into matchsticks
  • avocado, peeled & cut into thin slices
  • 2 slices of a large red onion, halved & separated into individual strips
  • 3 cups of arugula
  • fresh basil & parsley
  • 1 avocado, cut into thin slices
  • 2 cups of cooked vermicelli noodles
  • S & P
  1. Prep the veggies, fruit & noodles in advance
  2. Wet & ring out a dish towel to use as a work surface – rice paper will stick to almost everything else
  3. Fill a large mixing bowl with hot water
  4. Submerge rice paper into the bowl until soft – around a minute
  5. Lay flat on work surface and add ingredients to the centre
  6. Roll up each sheet, starting at top end and folding in both sides of sheet as you roll it up to enclose filling
  7. Cut in half and place in serving dish
  8. Garnish with sesame seeds

RECIPE: Asian Sesame Dipping Sauce

  • 1/2 cup Kraft Signature Asian Sesame Dressing
  • 1/3 cup Kraft Smooth Peanut Butter
  • 1 tsp. lite soy sauce
  • 1 Tbsp. warm water
  • Mix ingredients together
