I love the summer – especially this summer!!! The weather has been amazing. Sunny and hot! Really hot. Sometimes, really, really, really hot. AND our air conditioner is broken… AND we live on the 19th floor.
I know… wah, wah!! 19th floor = AMAZING view
The point is, I really didn’t want to make a hot dinner BUT I was craving pasta. Hmmm… conflict.
Not really. The trick is you make a cold tomato pasta sauce. It’s really that simple. Try this recipe, and in 15 minutes I promise you will have a yummy, healthy dinner that you haven’t slaved over a hot oven for.
RECIPE: Mmm… Summer Fresh Pasta
2 servings of whole wheat pasta
1 clove of garlic, crushed
4 tbsp fresh herbs, chopped (I used basil, chives & oregano)
3 smallish-medium tomatoes, diced
1 tbsp olive oil
2 tbsp pine nuts (optional)
1/4 cup grated cheese (I used old cheddar)
S & P
- Cook pasta
- Combine garlic, herbs, tomatoes, olive oil, pine nuts in a mixing bowl
- Plate pasta & top with fresh tomato sauce
- Garnish with cheese and S&P
This is a very, VERY versatile recipe. You can pretty much add any kind of vegetable into the mix and it would work. It’s REALLY good with avocados! But then again… what isn’t?
Note: This recipe serves 2, but doubles easily if necessary
